Sancerre is an official AOC appellation of the Loire Valley in Northern France. Its white wines are made with Sauvignon Blanc and represent the majority of the regions bottlings. Red wines are made with Pinot Noir and can rival some of the best Pinot Noir of Burgundy.

Sancerre represents 2,700 hectares (6,671 acres) of vineyards for an annual average production of 16.5 million liters.

Sancerre's clay-and-limestone soils, called Terres blanches (white soils) deliver a range of full-bodied wines, while its pure limestone soils give light and fruity wines.

White Sancerres are both dry and fruity. They should be served cool around 12°C (53°F). They match perfectly with seafood and with the famous French cheese "Crottin de Chavignol", a local goat-cheese specialty.

Red Sancerres should be served at a 15°C (59°F) temperature; their ideal companions are white meats and mild cheeses.
